Baking Day

Rather than write about freebies, today I thought I would talk about baking.  I much rather bake than cook a regular meal.  Much more fun for me.  So this morning I was in a baking mood.  I made Whole Wheat Waffles and Chocolate Chip Walnut Banana bread.  I have been trying to eat healthier, but I do not think the banana bread falls into that category.   I decided to double the waffle recipe and freeze them for quick breakfasts.  Here is what I made:

Whole Wheat Waffles
 
1 3/4 cups whole wheat flour
2 tablespoons sugar
1 tablespoon baking powder
2 eggs
1 3/4 cup milk
1/4 cup oil
1/4 cup applesauce
1 teaspoon vanilla
When I doubled the recipe I substituted the other 1 3/4 cup of milk for water
The doubled recipe made 9 large waffles

Amy's Banana Bread

1 3/4 cup flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup shortening or margarine
2/3 cup sugar
2 eggs
3 large bananas - ripe
2 teaspoons of vanilla
touch of cinnamon
1/2 cup chocolate chips
1/2 cup walnuts
Mix wet ingredients together then add dry ingredients - bake at 350 degrees for 45-50 minutes
