Christmas Baking & Freezing

My goal is to get all my baking done in the next 3 days.  Then I can freeze the items and be ready to give them out during Christmas as treats to friends and family. 

Here is what I plan on making

Chocolate & Peanut Butter Ribbon Dessert
Peanut Butter Balls - 2 batches
Snickerdoodles
Lemon Cheese Bars
Fudge - 1 batch with walnuts, 1 with peanut butter
Chocolate Chip Cookies
Peanut Butter Cheesecake Bars

I will keep you updated on my progress and provide recipes soon!

Easy Fudge - The cream cheese in the recipe makes them taste so good!

8 oz of cream cheese
1 box of powdered sugar
4 1 oz bars of semi sweet baking chocolate
1 tsp. vanilla
Dash of salt

Melt over low heat cheese and chocolate.  Gradually add sugar and then add vanilla.  This is also the time to add any extra goodies like nuts, peanut butter, marshmallows, peppermint candies.  Let your imagination go!

Line a square pan with plastic wrap.  Pour fudge in pan.  Cool in the fridge for at least 3 hours.  Flip pan over and cut into bite size pieces.

Now I am not freezing this, only keep it in the fridge.




Chocolate Chip Cookies

I got the recipe here.  I substituted regular flour with whole wheat.  Maybe a little dry, but still really tasty.  I also made them a little smaller and was able to get a little over 4 dozen cookies.  I had $1.50 coupons left from when I hosted a House Party I Can't Believe it is not Butter Party and used a few to purchase a few packs.
