Final Baking Day

December 6, 2009
So it took a few hours, but I am all done!  YEAH!!!

Today I made:

Peanut Butter Cheesecake Bars
1/2 cup unsalted butter
1 package yellow cake mix
2 8 oz packages cream cheese
1 cup peanut butter
3 eggs
1 1/4 cups sugar
1 cup salted peanuts chopped
Melted Chocolate (optional)

Preheat oven to 325 degrees
Beat cake mix and butter in large bowl with mixer until just crumbly.  Reserve 1 cup of mixture.  Press remaining mixture evenly into ungreased 13X9 in pan to form crust.  Bake 10 minutes cool on wire rack

Beat cream cheese and peanut butter in bowl with mixer until fluffy.  Beat in eggs, one at a time.  Gradually beat in sugar.  Spread filling over cooled crust.

Combine reserved cake mix mixture and peanuts, sprinkle over filling
Bake 45 minutes or until just set.  Chill at least 2 hours before serving.  Drizzle with melted chocolate, if desired




Lemon Cheese Bars

1 package white or yellow cake mix
2 eggs
1/3 cup vegetable oil
8 oz cream cheese
1/3 cup sugar
1 tsp. lemon juice

Preheat oven to 350
Combine cake mix, 1 egg and oil into bowl, stir until crumbly.  Reserve 1 cup.  Press remaining crumb mixture into ungreased 13X9 inch pan.  Bake 15 min. or until light golden brown.
Meanwhile combine remaining egg, cream cheese, sugar and lemon juice, beat until smooth.  Spread over baked crust.  Sprinkle reserved crumb mixture over it.
Bake 15 min. or until cream cheese layer is just set. 



Chocolate & Peanut Butter Ribbon Dessert

12 Nutter Butter Cookies
2 Tbsp. butter, melted
8 oz. cream cheese
1/2 cup peanut butter
1/2 cup sugar
1 tub of Cool Whip
2 squares of baking chocolate, melted.

Crush c8 cookies with rolling pin.  Mix cookie crumbs and butter.  Press into bottom of foil lined 9X5 loaf pan

Mix cream cheese, peanut butter, sugar and vanilla with mixer.  Gently stir in Cool Whip.  Spoon 1/2 cup of the mixture into another bowl and then to that bowl stir in melted chocolate.  With the remaining mixture spoon half of it over crust, then spoon in the mixture with the chocolate, and then the rest of the original mixture. 

Freeze 4 hours or overnight.  Invert onto plate, remove foil then re-invert.  Break remaining cookies over mixture along with a small amount of Cool Whip.

Today my plan is to make peanut butter balls and Snickerdoodles.  So far 2 batches of peanut butter balls are done!  The picture below is just one batch.  The Snickerdoodles are now done too!  I am done for today.  I got the recipe HERE.  I have made this recipe before and they are very tasty.  I forgot to take a picture.  Call it cookie burnout!

Christmas Baking & Freezing

My goal is to get all my baking done in the next 3 days.  Then I can freeze the items and be ready to give them out during Christmas as treats to friends and family.

Holiday Time

As I get older I find Christmas less and less enjoyable.  Am I becoming a scrooge in my old age?  I am tired of the meaning of CHRISTmas being all about presents and spending money.  Even Thanksgiving is now being taken over by shopping.  Stores opening up at midnight for Black Friday.   The holidays need to be able spending time with family, strengthing bonds with those we only see a few times a year.  Not about sitting around looking at the ads and planning the best shopping strategy.  It j...

Baking Day

Rather than write about freebies, today I thought I would talk about baking.  I much rather bake than cook a regular meal.  Much more fun for me.  So this morning I was in a baking mood.  I made Whole Wheat Waffles and Chocolate Chip Walnut Banana bread.  I have been trying to eat healthier, but I do not think the banana bread falls into that category.   I decided to double the waffle recipe and freeze them for quick breakfasts.  Here is what I made:

Free Magazines? Really??

That is what I was asking when I came across the first free magazine offer.  I had never hear of such a thing and thought for sure that there must be a catch.  Well, over one year later and about 15 free subscriptions, I can say that there is no catch.  They really are free!  You can even sign up for someone else and use it as a gift.  With Christmas coming up, it would be a great free gift!

Target

I use to shop at Target a lot, but then a Wal Mart opened closer to my home and I want to Target maybe 4 times a year.  Well, in the recent months Target has started to publish their own coupons and often times they are in the regular Sunday coupon circular.  The wonderful thing about these coupons is that they can be used when you use a regular manufacturer coupon.  I have been there twice in the last week.  First to get some Glade candles and then to get some Cover Girl make up.  So, take t...

I have used coupons for years, but I must say I am not one of the experts.  I have a coupon organizer, but I ran into a lady at the store a few weeks ago that had a binder and each page had 4 compartments.  Wow, now she was organized.  I know many ladies that will make extra trips to other stores to use coupons.  I just have not put that much into it.  I always check the Sunday paper and also print coupons on-line, but I try to use coupons for items I would normally buy anyway.  What is the p...

Final Baking Day

So it took a few hours, but I am all done!  YEAH!!!

Today I made:

Peanut Butter Cheesecake Bars
1/2 cup unsalted butter

3 eggs
1 1/4 cups sugar
1 cup salted peanuts chopped
Melted Chocolate (optional)

Preheat oven to 325 degrees
Beat cake mix and butter in large bowl with mixer until just crumbly.  Reserve 1 cup of mixture.  Press remaining mixture evenly into ungreased 13X9 in pan to form crust.  Bake 10 minutes cool on wire rack
