I don't know about you, but I often times feel like I am making the same few things week after week.  I thought in an effort to spice up our lives I would share what I am making for dinner. Tortilla Soup



This is a simple version that takes about 30 minutes, which is why I love it!

1 tsp. olive oil
2 zucchini, cut into cubes
1 can (29 oz) crushed tomatoes
6 cups chicken broth ( I usually use 4 and it is fine - that is one large box of broth)
1 1/2 tsp. cumin
3 tsp. taco seasoning
4 Chicken Breasts or you can buy a deli rotisserie chicken and shred it.
Tortilla chips

Optional:  Avocado, sour cream, cheese

Put oil into stockpot and heat.  Add zucchini and saute for 2 minutes.  Add tomatoes, chicken broth, cumin, taco seasoning and chicken.  Heat to a boil.  Turn down and simmer for 15-20 minutes. 

When you are ready to serve you can place a handful of tortilla chips in the bottom of the soap bowl or crumble on top.  Top with with extras.
