I was in a baking mood yesterday. I am the kind who has 2/3 of her cookbook filled with recipes for desserts! I had recently torn a page out of a magazine for a new jam filled muffin. I looked and had all the ingredients so I set out to make them. Once the dough was done I realized I had enough to make more than the 12 the recipe called for. But trying not to make too many I stuffed those cupcake liners and ended up with huge muffin tops, yum!

Pin It! These are so tasty and great when you want to make something sweet but do not have a ton of ingredients around. That was the case with us today.  The sweet tooth bit and there was not much around.  These did the trick.

You will need the following:

  • 2¼ Cups of Flour
  • ¾ Cups of Sugar
  • 2¼ Teaspoons of Baking Powder
  • ½ Teaspoon of Salt
  • 1 Teaspoon of Nutmeg
  • 2 Large Eggs
  • ¾ Cups of Milk

Just another oldie but goodie Fall recipe that I wanted to share.  

*Bake regular cupcakes - I made chocolate but you could make any flavor you want.

Apple Butter Recipe

I have been wanting to try making apple butter for awhile and yesterday was finally the day!  Here in Southern California, it is not an item you hear much about, and in fact, I had never tasted it before.  It was a fun process and left my house smelling good all day.

Scrumptious Pumpkin Cookies

Have you ever come up with a recipe based on one item you have around your house?  Well, I did today.  I purchased a box of Jello Pumpkin Spice Pudding Mix awhile back on clearance at my local Ralphs.  I have had it for awhile, and now that it is fall it was time to figure out what to make with it.  Below is my recipe for Scrumptious Pumpkin Cookies.  This recipe makes 5 dozen cookies, great to share with friends and family, take to a party, or make for Thanksgiving.  I hope you enjoy them!

Peach Pie Sunday

Banana Bread Cookies

They might look like unassuming cookies, but my goodness they are so good.  Especially warm, right out of the oven! If you love banana bread, especially with chocolate chips, then you will love these!   Here is what you will need to make them:

Oatmeal Peanut Butter Cookies

It can be a struggle sometimes to make a healthy cookie that the kids will still love.  I baked these Oatmeal Peanut Butter cookies tonight after dinner and loved them.  I hope your kids will too!

1 1/2 sticks butter
1 cup old-fashioned oats
1 cup + 2 tablespoons all purpose flour

I made my son, Chris, a Buzz Lightyear cake for his 5th birthday.

I love Mexican food, especially when it's homemade. The other night I made one of my favorites, chicken and cheese enchiladas with guacamole. You should start by making the enchiladas first, you can cook up chicken just for this or use left over roasted or fried chicken.
