Earlier this week I had a taste for some ice cream, but I had none in my freezer and the Frosty Bar across the street was closed.  I also did not want to take a trip to the store. At this point I just wanted something to satisfy my craving, which was for something cold and smooth. So, I looked in my pantry and found a large box of Jell-O chocolate pudding mix. I decided to make it and of course I just couldn’t make any ordinary pudding. I looked in my fridge and noticed that I had some heavy whipping cream, so I got creative:

½
cup heavy whipping cream

2 cups 1% milk

Pudding mix

I mixed it all up with my hand mixer until it became thick. Just like that, I had mousse! I thought now how can I make this special? Well, I remembered I had some mini Oreos.  Now to make a topping!

Whipping cream (about 1 cup or so)

2 tablespoons sugar

1 ½ teaspoons cream of tartar

1 ½ teaspoons of vanilla extract

I used my hand mixer again to make the topping. I layered in a glass cup the mousse, 4 crumbled mini Oreos and the whipped topping and garnished that with one mini Oreo. I was able to make 6 servings. Delicious! I and my family loved it and I’m sure you and yours will too!
