This week we had one of my favorite dishes, Chicken Mole. I've had the true from scratch recipe years ago, but I'm not that good nor do I have that much time, so I came up with a quick and easy recipe. I like, no, I LOVE my crockpot and I try to find ways of making stove top recipes into a crockpot one. Well, I've come up with this......
 
 
Easy Chicken Mole with Rice and Beans
 
6 cups Chicken Breast cut into large pieces
3-4 TB Butter or Cooking Spray
1 1/2 TB Minced Garlic
4 cups Chicken Broth
1 jar Dona Maria Mole Sauce
 
2 cups Uncooked Long Grain White Rice
2 small or 1 large can Fat Free Refried Beans
8-12 Warmed Tortillas
 
Melt butter or add cooking oil to a large frying pan add chicken and garlic. Cook until chicken turns white and is no longer pink inside. Using large crockpot, add cooked chicken, broth and mole sauce. Set crockpot to cook for 4 to 6 hours, stirring occassionally (every 1hr or so). In the last hour start making your rice as per directions on package. Warm beans on stove. Serve Chicken Mole over rice and beans on the side.
