Today Janice has two tasty recipes for us! (normally I post pictures of her recipes but for some reason I cannot attach them, I will keep working on it because they look delicious!
Okay home cooks, I've got the best tasting and easy pulled pork recipe for you and it's cooked in a crockpot. This recipe is so versatile you can use it for sandwiches, burritos, tostadas, our you can even top mashed potatoes or rice with it. Yum yummy!
BBQ Pulled Pork
1 med onion, finely chopped
1 pork shoulder butt roast (2-3 lbs)
1 bottle barbecue sauce (18 oz) (no honey)
1/4 pure honey
6 cloves of garlic, minced
2 tsp ground ginger
I recommend Reynolds brand Slow Cooker Liners they make for fast and easy clean up. Plus you can start another meal right after if you want. They're fairly cheap too, I bought mine @ Wal-Mart for $2.19 per box of 4 liners.
Using a 5-qt slow cooker, put onion and roast in. In a bowl, combine the bbq sauce, honey, garlic and ginger; pour over meat. Cover and cook for 5-6 hours or until meat is tender. When done, remove the meat and place in a casserole dish and let cool slightly. Shred meat with two forks and return to the slow cooker; heat through on low for about an hour or so. Serve on your favorite bun or in a tortilla or top it on some mashed potatoes or rice.
Now it's dessert time!
After I had my pulled pork started, I started a cake to cook in my small 3-qt crockpot. My pot is too small for the full recipe, so I had to put aside about 2 1/2 cups. You could easily cook the whole amount in a 5-qt crockpot (I only have 1 of each size). It calls for cooking spray to coat the inside of the slow cooker, but I used a Reynolds brand slow cooker liner and then sprayed the inside of that instead. It made removing and serving the cake so much easier.
Decadent Delight
Nonstick cooking spray
1 package (18oz) spice cake mix
1 cup sour cream
1 cup mini chocolate chips
1 cup water
4 eggs
3/4 cup vegetable oil
1 package (4-serving size) instant pumpkin spice (if available) or
vanilla pudding and pie filling mix
Ice cream or whipped topping
Spray inside of 5-qt slow cooker with cooking spray. In a large bowl combine all ingredients together and pour into the slow cooker. cook on Low for 6-8 hours or on High for 3-4 hours. Pull out with the bag (if using) and serve hot or warm with ice cream or whipped topping if desired. You could use any cake or pudding mix for what suits your taste.
I have to tell you, I used the recipes from Rival Crock Pot Stoneware Slow Cooker Recipes for Every Occasion, the Wal*Mart Edition 2005. I adjusted the recipes a bit.
