This week I experimented a bit with another recipe. I do believe I have a winner here. This is easy and very delicious, even my picky 11 y/o likes it. It reminds me of a bread pudding, but more smooth. You must be careful though, you may not be able to stop eating it once you start, I eat a third of mine.......LOL

Lemon Blueberry Delight
 
1 Package Lemon Cake Mix
12 oz Blueberry Yogurt
1 1/2 cups Blueberries (fresh or frozen)
1/2 cup Water
4 Eggs
1/2 cup Vegetable Oil
1 package (4-serving size) Instant Vanilla Pudding Mix
 
Set oven to 350 degrees. Spray a 9x13 baking dish with baking or cooking spray. 
Combine all ingredients (except blueberries) together and mix well. Fold in blueberries. 
Pour into prepared baking dish. 
Place into oven and bake for 50 minutes. Cake will rise while baking, but as it cools it will collapse, this is okay. To serve warm, let cake cool for 10 minutes and cut into squares. No ice cream needed, unless you desire it.
