It can be a struggle sometimes to make a healthy cookie that the kids will still love.  I baked these Oatmeal Peanut Butter cookies tonight after dinner and loved them.  I hope your kids will too!

1 1/2 sticks butter
1 cup old-fashioned oats
1 cup + 2 tablespoons all purpose flour
1 tsp. salt
1 tsp. baking soda
1/3 cup sugar
1/2 cup dark brown sugar
1 large egg
1/2 cup chunky peanut butter


Preheat oven to 350 degrees

Melt 1/2 a stick of butter in saucepan then add oats.  Cook for 5-7 minutes stirring frequently.  Allow the oats to dry on the parchment lined pan you will be using to bake the cookies

Whisk together flour, baking soda and salt.  In a separate bowl add remaining butter and both sugars on medium high speed mixer.  Add egg and then peanut butter. Then add oats once they have cooled and lastly the flour mixture,

Roll dough into 1 1/2 inch balls and cook for 15 minutes.  Eat and enjoy :)
