I have been in the baking mood lately and I came across this cupcake recipe I just had to try.  Click Here to see the original recipe and write up.  I changed a few things.  

Cupcakes

2 1/4 cups flour
1 TBL baking powder 
1/2 tsp baking soda
1/2 tsp salt
2 TBL pumpkin spice
2 3/4 tsp instant coffee
1/2 cup softened butter
1 1/3 cup sugar
2 eggs
1 cup mashed pumpkin
2/3 cup milk

Mix dry ingredients then mix wet ingredients (except pumpkin & milk) and mix together then add pumpkin & milk.  Prepare muffin pan by using non stick spray and flour.  Preheat oven to 375 degrees and cook for 25 minutes.  Put cupcakes on cooling rack.  Recipe makes 24 cupcakes.  While cupcakes are cooling prepare icing.

Icing 

   

1/4 cup butter
2 cups powdered sugar
8 ounces of cream cheese (softened)
2 tsp vanilla

Mix all ingredients together and put into an icing bag with large tip and then decorate cupcakes like whipped cream. 

Now for what might be the tricky part...getting the cups.  We were lucky enough to know someone who works at a Starbucks and we were able to get 2 sizes of cups.  The sample cups and the small coffee cups.  Put the cupcakes into the sample cups and put the sample cups inside the coffee cups.  Decorate the cupcakes and then cut straws into 4 pieces and put into cupcakes.  You can also purchase regular cups at a store, the Starbucks cups are just really cute :)  Here are a few pictures of the process along the way...
