Have you ever come up with a recipe based on one item you have around your house?  Well, I did today.  I purchased a box of Jello Pumpkin Spice Pudding Mix awhile back on clearance at my local Ralphs.  I have had it for awhile, and now that it is fall it was time to figure out what to make with it.  Below is my recipe for Scrumptious Pumpkin Cookies.  This recipe makes 5 dozen cookies, great to share with friends and family, take to a party, or make for Thanksgiving.  I hope you enjoy them!

1 cup butter, softened

1 cup canola oil

1 cup sugar

1 cup confectioners' sugar

2 eggs

1 teaspoon vanilla extract

1 package (3.4 ounces) instant pumpkin spice pudding mix

1 tsp pumpkin pie spice

4 cups all-purpose flour

2 1/4 tablespoons of baking powder

cinnamon/sugar mixture for tops of cookies

 

In a large bowl, cream the butter, oil and sugars until light and fluffy.

Beat in eggs, vanilla and dry pudding mix.

Combine the flour, cream of tartar and baking soda; gradually add to creamed mixture and mix well.

Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets.

Roll dough into balls and roll in cinnamon sugar mixture.

Bake at 350° for 12-15 minutes or until lightly browned.

Remove to wire racks.
