I was in a baking mood yesterday. I am the kind who has 2/3 of her cookbook filled with recipes for desserts! I had recently torn a page out of a magazine for a new jam filled muffin. I looked and had all the ingredients so I set out to make them. Once the dough was done I realized I had enough to make more than the 12 the recipe called for. But trying not to make too many I stuffed those cupcake liners and ended up with huge muffin tops, yum!
I waited patiently for them to cool a few hours and finally had one after dinner. I was about 1/3 of the way through when I crunched down on something. Now I added raspberry preserves and they have seeds, but this was too crunchy. I tried to feel around and then realized I would just have to spit out what was in my mouth. It was then that I realized... the entire front of one of my crowns (yes I have many) had come off and I was crunching way on it! So my beautiful muffin turned into a mess.
To follow up, went to the dentist today and of course I need a new crown. Going back Thursday to get the process started.
By the way, here is the recipe if you want to try them. But be warned :)
Morning Magic Muffins3 cups all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1/4 cup (1 1/2 sticks) unsalted butter at room temp
1 1/2 cups sugar
3 large eggs
2 tsp vanilla extract
1 1/2 cups sour cream (at room temp)
Heat over to 350 - Put cupcake liners in a muffin tin or spray with non-stick spray.
Add all dry ingredients and set aside
Mix butter and sugar in mixer, add 1 egg at a time and then extract and sour cream.
Slowly add dry ingredients
This recipe said it made 12 muffins but I got 15 very large ones out of it.
Cook for 20-25 minutes. Allow to cool completely and then making icing to drizzle over them
Icing2 cups confectioner's sugar
3 to 4 Tbsp whole milk
1/2 tsp vanilla extract
